- 1 tbsp olive oil
- 2 chicken breasts, diced
- 100g chorizo, sliced
- 1 onion, diced
- 2 red peppers, deseeded and chopped
- 2 garlic cloves, crushed
- 1 tbsp Cajun seasoning
- 250g long grain rice
- 400g can chopped tomatoes
- 550ml chicken stock
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large frying pan with a lid or a Dutch oven.
- Add the diced chicken and sliced chorizo, cooking over high heat for 3-4 minutes until the chicken begins to brown.
- Add the onion and red peppers, cooking for another 5 minutes until softened.
- Stir in the garlic and Cajun seasoning, cooking for 1 minute until fragrant.
- Add the rice and stir to coat in the oil and spices.
- Pour in the chopped tomatoes and chicken stock, then bring to a boil.
