Ingredients

  • 1 tbsp olive oil
  • 2 chicken breasts, diced
  • 100g chorizo, sliced
  • 1 onion, diced
  • 2 red peppers, deseeded and chopped
  • 2 garlic cloves, crushed
  • 1 tbsp Cajun seasoning
  • 250g long grain rice
  • 400g can chopped tomatoes
  • 550ml chicken stock
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large frying pan with a lid or a Dutch oven.
  2. Add the diced chicken and sliced chorizo, cooking over high heat for 3-4 minutes until the chicken begins to brown.
  3. Add the onion and red peppers, cooking for another 5 minutes until softened.
  4. Stir in the garlic and Cajun seasoning, cooking for 1 minute until fragrant.
  5. Add the rice and stir to coat in the oil and spices.
  6. Pour in the chopped tomatoes and chicken stock, then bring to a boil.
  7. Reduce heat to a simmer, cover with a lid, and cook for 20-25 minutes until the rice is tender and the liquid has been absorbed.
  8. Garnish with fresh parsley before serving.
