Ingredients

For the Chicken

  • 1 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup baby spinach
  • 1 cup heavy cream (or coconut cream for a dairy-free option)
  • ½ cup grated parmesan cheese (or nutritional yeast for dairy-free)
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • Salt and pepper to taste

For the Roasted Asparagus

  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp grated parmesan (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the asparagus: Toss the asparagus with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 12-15 minutes, until tender.
  3. Sear the chicken: Heat olive oil in a large pan over medium-high heat. Season the chicken with salt and pepper, then cook for 5-6 minutes per side until golden brown and fully cooked. Remove and set aside.
  4. Make the sauce: In the same pan, add butter and minced garlic. Sauté for 30 seconds, then stir in sun-dried tomatoes, oregano, and basil.
  5. Add the cream & spinach: Pour in the heavy cream, stir, and let it simmer for 2 minutes before adding the spinach and parmesan. Stir until creamy.
  6. Combine & serve: Return the chicken to the pan, spoon the sauce over it, and let it simmer for 2-3 minutes. Serve with roasted asparagus and enjoy your romantic Valentine’s dinner!
