For the Chicken

- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup baby spinach
- 1 cup heavy cream (or coconut cream for a dairy-free option)
- ½ cup grated parmesan cheese (or nutritional yeast for dairy-free)
- ½ tsp dried oregano
- ½ tsp dried basil
- Salt and pepper to taste
For the Roasted Asparagus
- 1 bunch asparagus, trimmed
- 1 tbsp olive oil
- ½ tsp garlic powder
- Salt and pepper to taste
- 1 tbsp grated parmesan (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the asparagus: Toss the asparagus with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 12-15 minutes, until tender.
- Sear the chicken: Heat olive oil in a large pan over medium-high heat. Season the chicken with salt and pepper, then cook for 5-6 minutes per side until golden brown and fully cooked. Remove and set aside.
- Make the sauce: In the same pan, add butter and minced garlic. Sauté for 30 seconds, then stir in sun-dried tomatoes, oregano, and basil.
- Add the cream & spinach: Pour in the heavy cream, stir, and let it simmer for 2 minutes before adding the spinach and parmesan. Stir until creamy.
