Ingredients

  • 1 tbsp olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 red pepper, deseeded and diced
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes (optional)
  • 2 x 400g cans mixed beans, drained and rinsed
  • 400g can chopped tomatoes
  • 1 tbsp tomato purée
  • 1 tbsp Worcestershire sauce (use vegan version if needed)
  • 1 tsp brown sugar
  • 4 thick slices of whole grain bread
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and cook for 5 minutes until softened.
  2. Add the garlic and red pepper, cooking for another 3 minutes.
  3. Stir in the smoked paprika and chili flakes (if using), cooking for 30 seconds until fragrant.
  4. Add the beans, chopped tomatoes, tomato purée, Worcestershire sauce, and sugar. Season with salt and pepper.
  5. Bring to a simmer and cook for 10-15 minutes until slightly thickened.
  6. While the beans cook, toast the bread slices.
  7. Place the toast on plates and spoon the smoky beans generously on top.
  8. Garnish with fresh parsley and serve immediately
