Ingredients
- 1 tbsp olive oil
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 red pepper, deseeded and diced
- 1 tsp smoked paprika
- 1/2 tsp chili flakes (optional)
- 2 x 400g cans mixed beans, drained and rinsed
- 400g can chopped tomatoes
- 1 tbsp tomato purée
- 1 tbsp Worcestershire sauce (use vegan version if needed)
- 1 tsp brown sugar
- 4 thick slices of whole grain bread
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large saucepan over medium heat. Add the onion and cook for 5 minutes until softened.
- Add the garlic and red pepper, cooking for another 3 minutes.
- Stir in the smoked paprika and chili flakes (if using), cooking for 30 seconds until fragrant.
- Add the beans, chopped tomatoes, tomato purée, Worcestershire sauce, and sugar. Season with salt and pepper.
- Bring to a simmer and cook for 10-15 minutes until slightly thickened.
- While the beans cook, toast the bread slices.
- Place the toast on plates and spoon the smoky beans generously on top.
- Garnish with fresh parsley and serve immediately
