  • 75g dried apricots

  • 20g sesame seeds

Instructions:

  1. Prep the ingredients:
    Soak the dates and apricots in warm water for about 5 minutes to soften them, then drain well.
  2. Blend:
    Add the pumpkin seeds, walnuts, softened dates and apricots, and orange zest to a food processor. Blend until the mixture is sticky and holds together when pressed. You can leave it a bit chunky for texture or blend longer for a smoother mix.
  3. Shape:
    Roll the mixture into small balls or press it into a lined dish to cut into bars.
  4. Coat:
    Roll each piece in sesame seeds for a nutty finish and extra crunch.
  5. Chill (optional):
    Pop them in the fridge for 15–30 minutes if you prefer a firmer bite.
